Acqua Proudly Welcomes its New Italian Head Chef, Luca D’ Amora

Acqua's tasteful, tropical interiors reopened and welcomed gastronomes with fresh and authentic selections under the wing of its new Head Chef. Armed with 15 years of experience in Italian cuisine, Chef Luca D’Amora has honed his craft while working with global teams in various 5-star hotels around the world, including Soho House Hotel and Taj Coromandel Hotel in India, Long Beach Resort in Mauritius Islands, and Baglioni Hotel in London. Chef Luca's impressive background also includes working in Michelin-starred establishments, such as renowned restaurants Gualtiero Marchesi and Pierino Penati, both located in Italy.
The young and dynamic Italian Chef shares his love for the rich and diverse culture of his home country to discerning diners through his newly curated selections. As a native of Napoli, also known as the Land of Pizza, Chef Luca shares how he found his passion for cooking in a place full of tradition and a thousand nuances. Growing up with a professional wood-burning oven at home, his grandfather used to spend Sundays baking pizza for the whole family. This served as his inspiration on how he revamped Acqua’s menu to feature delectable options, with its main offering being Italian pizza that comprises of eight selections of classic ingredients ranging from different kinds of vegetables to meats, all baked to perfection. Pizzas include Marinara, Margherita, Diavola among the many flavors and varieties.
Acqua’s menu, officially launched on May 14, 2023, in time for Mother’s Day festivities, featured an assortment of culinary delights, like Fegattini di Pollo, Tagliere di Salumi, and Insalata di Mare as appetizers (antipasti e zuppe), pastas and risottos like Puttanesca, Vongole, and Risotto Pere e Zola, and even well-loved courses (secondo) like Tagliata di Manzo or Rump Cap Wagyu and Agnello Scottadito also known as Grilled Lamb Rack. To end the entire gustatory journey on a sweet note, desserts like Semifreddo ai Lamponi or Raspberry and Lemon Parfait and an array of regional Italian cheeses, Selezione di Formaggi con Confettura e Miele, provided guests with a complete epicurean sojourn to Italy.

To complement these delectable dishes, a carefully curated selection of exquisite Clarendelle wines from Chateau Haut-Brion was expertly paired.

In May 15, 2023, a brand film by a GRAMMY® award-winning director Dave Meyers, together with specially designed drinks and menus, ushered in a campaign to help guests discover their own Shangri-La. The global campaign was created to help guests find their personal moments of joy at the luxury hotel chain renowned for its delivery of Asian hospitality. As part of this global campaign, Shangri-La Mactan stood among the esteemed properties participating in this exclusive offering, where guests indulged at renowned restaurants featuring the Lobby Lounge and Tea of Spring.

The Lobby Lounge presented the “Daydreamer” cocktail, an exquisite creation meticulously crafted by expert mixologists from Shangri-La Singapore. With its sour and sweet flavor and captivating presentation, the Daydreamer cocktail embodied the essence of a blissful reverie.

Priced at Php 680++ per glass, the Daydreamer cocktail was made available for guests to savor not only at the Lobby Lounge and Tea of Spring but also at Acqua and Cowrie Cove.

Adding to the gastronomic delights of the campaign was the Whimsical Menu, a culinary masterpiece available exclusively at Tea of Spring. Curated by the esteemed Executive Chinese Chef, Liu Zhijun, this menu showcased an exceptional selection of dishes that seamlessly blended localized flavors with international techniques while shining the spotlight on the freshest locally sourced and sustainable staple ingredients.
Guests delighted in Bohol-farmed Prawns and Cebuano Mangoes with Kataifi Noodles, Double-boiled Abalone and Dried Scallop served in a Coconut Shell, Red Lapu-Lapu Grouper Fillet with daubs of Gold Broth, and Smoky A5 Wagyu Cube Roll in Merlot Black Pepper Sauce. The Whimsical Menu offered an unforgettable dining experience priced at PHP9,800 for two persons. Guests who wished to explore the flavors at their own pace could also choose to experience the dishes from the Whimsical Menu à la carte.
