For those looking to experience Ilonggo cuisine at its finest, KBL (kadyos, baboy, langka) is an absolute must-try. The rich stew, made with pork and jackfruit is a true reflection of Iloilo’s culinary roots—bold, comforting, and deeply flavorful. The food takes on a contemporary twist. Under the guidance of Chef Rogine Candelario and Executive Sous Chef Richard Egdani, the bar’s menu offers an inventive take on Filipino dishes. The grilled salmon, tender and flavorful, was perfectly complemented by a vibrant sauce that brought out the best of the fresh ingredients. Another innovative creation was the sisig pizza, which took the beloved Filipino dish and gave it a new, exciting form with an egg on top. It was savory and delicious. For dessert, we were treated to a few specialties, including langka crinkle and kadyos crinkle, two local treats that perfectly balanced sweet and savory flavors. The mango oatmeal and tablea cookies were a comforting way to end the meal, offering a taste of the region’s best ingredients.
