Stepping inside Chesa Bianca is entering a Swiss chalet and savoring the rich, comforting flavors of tradition.
For those seeking respite from the Manila bustle and wishing a journey to a land of snow-capped peaks and hearty fare, Chesa Bianca offers an authentic escape. More than just a restaurant, it’s a lovingly crafted homage to Swiss culinary heritage, thanks to Werner Berger, a passionate purveyor of European delicacies.
“I wanted to share a part of home,” Berger explains, his voice warm with nostalgia. “Switzerland is known for its precision and quality, but its cuisine is deeply comforting—hearty, rich, yet nuanced. Chesa Bianca was created to bring that alpine warmth to Manila.”
Stepping inside, one is immediately transported. The interior evokes the feeling of an authentic alpine chalet, complete with pinewood walls and the accoutrements and implements of Swiss life hanging on the walls. This assures food faithfully following age-old traditions in Swiss cooking.
The menu reads like a culinary tour of Switzerland, with dishes designed to be shared and savored. “Our Zürcher Geschnetzeltes (veal in cream sauce) and raclette are standouts,” Berger notes, highlighting the restaurant’s commitment to classic preparations. The Zürcher Geschnetzeltes is a solid example of the commitment of the restaurant’s culinary team to classic recipes. The veal is tender, the mushroom cream sauce rich and flavorful, and the rösti offers a satisfying textural contrast.
“So is the fondue—both cheese and meat versions,” Berge continues. “These dishes are more than recipes; they’re experiences. They embody gatherings, tradition, and an appreciation for slow, shared meals.” Indeed, if sharing is your preference, the traditional fondue is a reliable choice. The blend of Emmental and Gruyère offers a nutty and sharp tang that pairs well with the gentle kick of white wine and garlic.
The Sausage and Cheese Salad are a hearty and rustic option while the Röschti Oberland, with its layers of potato, ham, cheese, and egg, is designed to satisfy a big appetite with classic Swiss flavors.
The well-executed dishes here showcase the characteristic heartiness of Swiss cuisine, offering a genuine representation of traditional recipes. The menu appeals to those seeking a straightforward and enjoyable meal rooted in authentic ingredients and techniques. Chesa Bianca presents a reliable experience for those curious about or already fond of Swiss culinary traditions.
Perhaps surprisingly, considering the distance, Filipino diners have readily embraced the restaurant’s unique offerings. “They’ve embraced it more openly than one might expect,” says Berger. “Filipinos have a very sophisticated palate, and they appreciate quality. We’ve stayed true to the authenticity of the recipes, perhaps adjusting portion sizes or spice levels ever so slightly, but the essence remains untouched.
Complementing the food is a thoughtfully selected wine list, prioritizing Swiss and European labels. “We prioritize Swiss and European wines that naturally pair with the dishes we serve,” Berger explains. “White wines pair beautifully with cheese fondue, while a Pinot Noir complements our meat-based dishes. We also look at balance—something for the connoisseur and the casual drinker alike. Me and Mr. Frei, and the rest of the management do wine tastings before we officially sell a product in our store.”
But what truly sets Chesa Bianca apart is the overall experience. “From the moment you enter, there’s a sense of stepping into a different world,” Berger says. “We create moments that our guests remember.” The most popular dish, the cheese fondue, perfectly encapsulates this sentiment. “It’s interactive, fun, and nostalgic—even for guests trying it for the first time. It brings people together, and that’s the heart of what we do.”
Ultimately, Berger hopes that guests leave Chesa Bianca with more than just a full stomach. “A sense of comfort. A memory of sharing a meal that was both special and satisfying,” he says. “I want guests to feel like they’ve discovered something unique, yet familiar. That’s the magic of Swiss hospitality—welcoming, consistent, and heartfelt.” And that, in essence, is the enduring appeal of Chesa Bianca.
